Description
Delicious peach cottage cheese bowls, perfect for a healthy dessert or snack.
Ingredients
Scale
- 2 ripe peaches (fresh, sliced)
- 2 cups (450g) low fat cottage cheese
- 2 tablespoons (30g) chopped shelled pistachios
- 1 teaspoon (4g) brown sugar
- ¼ teaspoon (0.5g) ground cinnamon
- Olive oil spray (to lightly coat skillet)
- Honey (optional, for drizzling)
Instructions
- Step 1: Heat a small skillet over medium heat, then spray lightly with olive oil. This prevents the peaches from sticking and allows for even cooking.

- Step 2: Add the sliced peaches, brown sugar, and ground cinnamon to the skillet. Stir gently to mix and allow the brown sugar to melt slightly, which enhances caramelization and sweetness.

- Step 3: Leave the peach mixture undisturbed in the skillet for 1 minute. This step is key for caramelizing the sugar and peaches, giving a lovely golden color and deeper flavor.

- Step 4: After 1 minute, stir the peaches and cook for an additional minute. Watch for the peaches to become tender and slightly golden but not mushy.

- Step 5: Transfer the caramelized peaches to a bowl and let them cool for about 5 minutes. Cooling allows the juices to settle and the flavors to develop fully.

- Step 6: Divide the cottage cheese evenly, scooping 1 cup into each of two serving bowls. Cottage cheese serves as the creamy, protein-rich base for the bowls.

- Step 7: Layer half of the cooled peaches atop the cottage cheese in each bowl. Sprinkle 1 tablespoon of chopped pistachios over each for crunch and visual appeal.

- Step 8: Optionally, drizzle a small amount of honey over each bowl to add natural sweetness and a glossy finish. Approximately 1 teaspoon per bowl may be used according to taste.

Notes
- Room Temperature: Keep the assembled bowls in an airtight container at room temperature for up to 4 hours to maintain freshness before serving.
- Refrigeration: Store leftovers covered tightly in an airtight container in the refrigerator for up to 2 days to prevent moisture loss and maintain texture.
- Freezing: Place in a freezer-safe container for up to 1 month. Thaw overnight in the refrigerator before consuming and stir gently to recombine ingredients.
- If peaches release too much juice while cooking, reduce heat slightly and sauté for an extra 1-2 minutes to improve caramelization.
- If peaches do not brown after 1 minute of undisturbed cooking, leave them untouched for an additional 1-2 minutes to promote caramelization.
- For creamier texture, use 2 cups of thicker low-fat cottage cheese in each bowl, especially if the cottage cheese appears runny.
- Add extra texture by sprinkling an additional tablespoon of chopped pistachios on top before serving.
- For extra sweetness, drizzle 1 teaspoon honey over peaches right before serving.
