Description

A refreshing peach and cottage cheese bowl that’s quick to prepare and perfect for a healthy snack or breakfast.

Ingredients

Scale
  • 1 medium peach, fresh (can substitute frozen or canned if needed)
  • 1 cup (8 oz / 227 g) cottage cheese, small curd, full-fat
  • 1 teaspoon (about ½ lemon) lemon juice, optional
  • 1 tablespoon (15 ml) honey, raw preferred (maple syrup as substitute)
  • ¼ teaspoon ground cinnamon, for garnish

Instructions

  1. Step 1: Slice the peach in half and remove the pit. Dice one half into small pieces (about ¼-inch dice). Cut the other half into long, thin slices for garnishing. This combination provides texture contrast and a visually appealing presentation.
    Step 1
  2. Step 2: Place half of the cottage cheese in a small bowl. Add the optional lemon juice (approximately 1 teaspoon) and stir gently. This prevents the peaches from browning and brightens the overall flavor.
    Step 2
  3. Step 3: In serving bowls, add the lemon-stirred cottage cheese as the base layer. Next, add the diced peaches evenly over the cottage cheese. Top with the remaining cottage cheese. For better presentation, swirl the cottage cheese and peaches gently without mixing completely to maintain visual appeal.
    Step 3
  4. Step 4: Arrange the sliced peach pieces on top for garnish. Drizzle the honey evenly over the bowl in a circular motion to distribute sweetness consistently. Finish by sprinkling the cinnamon on top. Serve immediately for best freshness.
    Step 4

Notes

  • Room Temperature: Store in an airtight container no longer than 2 hours to keep freshness and avoid spoilage.
  • Refrigeration: Keep in an airtight container in the refrigerator for up to 3 days. Stir gently before serving to recombine ingredients and improve texture.
  • Freezing: Place the bowl in a freezer-safe container or bag and freeze up to 1 month. Thaw overnight in the refrigerator and stir gently before serving.
  • If peaches are firm, allow them to sit at room temperature for 1-2 days until they soften, checking daily for ripeness.
  • For canned peaches, drain thoroughly in a colander for about 5 minutes to prevent excess liquid.
  • Warm honey slightly (10-15 seconds in microwave) if it clumps, to allow smooth drizzling.
  • If cottage cheese is watery, drain excess moisture by scooping it with a slotted spoon for about 1 minute before assembling.
  • For a tangier flavor, squeeze an additional teaspoon of lemon juice over the peaches just before serving.
