A refreshing iced guava passionfruit drink perfect for hot days, made with pineapple juice, coconut milk, and fresh ginger.

- 1/4 cup (50 g) granulated sugar
- 2 tablespoons (about 12 g) fresh ginger, grated
- 3/4 cup (180 ml) unsweetened coconut milk
- 1/2 cup (120 ml) guava nectar
- 1/4 cup (60 ml) passionfruit juice
- Ice, for serving
Instructions
- Step 1: In a saucepan, combine the pineapple juice, granulated sugar, and grated fresh ginger. Heat over medium heat, stirring occasionally to avoid sticking or burning, until the sugar has completely dissolved, approximately 5 minutes.
- Step 2: Remove the saucepan from heat. Strain the syrup through a fine sieve to remove all pieces of ginger, ensuring a smooth syrup texture. Set aside to cool.
- Step 3: In a large pitcher, pour the unsweetened coconut milk, guava nectar, passionfruit juice, and the cooled pineapple-ginger syrup. Stir thoroughly to combine. Taste the mixture at this stage and adjust sweetness if necessary, as guava nectar and passionfruit juice sweetness may vary.
- Step 4: Fill tall glasses with fresh, clear ice cubes. Pour the mixed guava passionfruit drink over the ice.
- Step 5: Optionally, garnish each glass with fresh mint leaves or a slice of fruit such as lime for added aroma and visual appeal before serving.
