Description

A refreshing iced guava passionfruit drink perfect for hot days, made with pineapple juice, coconut milk, and fresh ginger.

Ingredients

Scale
  • 1/4 cup (60 ml) pineapple juice
  • 1/4 cup (50 g) granulated sugar
  • 2 tablespoons (about 12 g) fresh ginger, grated
  • 3/4 cup (180 ml) unsweetened coconut milk
  • 1/2 cup (120 ml) guava nectar
  • 1/4 cup (60 ml) passionfruit juice
  • Ice, for serving

Instructions

  1. Step 1: In a saucepan, combine the pineapple juice, granulated sugar, and grated fresh ginger. Heat over medium heat, stirring occasionally to avoid sticking or burning, until the sugar has completely dissolved, approximately 5 minutes.
    Step 1
  2. Step 2: Remove the saucepan from heat. Strain the syrup through a fine sieve to remove all pieces of ginger, ensuring a smooth syrup texture. Set aside to cool.
    Step 2
  3. Step 3: In a large pitcher, pour the unsweetened coconut milk, guava nectar, passionfruit juice, and the cooled pineapple-ginger syrup. Stir thoroughly to combine. Taste the mixture at this stage and adjust sweetness if necessary, as guava nectar and passionfruit juice sweetness may vary.
    Step 3
  4. Step 4: Fill tall glasses with fresh, clear ice cubes. Pour the mixed guava passionfruit drink over the ice.
    Step 4
  5. Step 5: Optionally, garnish each glass with fresh mint leaves or a slice of fruit such as lime for added aroma and visual appeal before serving.
    Step 5

Notes

  • Room Temperature: Store the drink in an airtight container away from sunlight for up to 1 day. Stir well before serving.
  • Refrigeration: Keep stored in an airtight container in the refrigerator for up to 3 days. Stir thoroughly before serving over ice.
  • Freezing: Pour the drink into a freezer-safe container or freezer bag. Freeze for up to 1 month. Thaw overnight in the refrigerator before use.
  • If the syrup is too sweet, add about 1 tablespoon of lemon juice after the sugar dissolves to balance the flavors.
  • Strain the syrup immediately after cooking through a fine sieve if any ginger pieces remain for a clean texture.
  • For a creamier texture, increase the coconut milk quantity to 1 cup (240 ml), and adjust sweetness accordingly after tasting.
  • If the drinkโ€™s flavor seems weak, add an extra 2 tablespoons (30 ml) of guava nectar after mixing ingredients for a bolder taste.
  • Garnish each serving with a fresh mint sprig or lime slice for a refreshing finishing touch.
